Sustainability Festival 2021: Waste Less Food

Earlier in the week we announced we’d be taking a key step in reducing our carbon footprint at the Count-Us-In site by pledging to cut our food waste. (We’ve included the links to how to support us at the bottom of the page, if you missed them the first time.)

Today we’d like to share some recipes that use up bananas and watermelon peels, both of which get thrown away far more than they should.

Banana Recipes

Banana Ice Cream

Overripe bananas always give us an excuse for banana bread or pancakes, but when you’re pressed for time, we think this ridiculously easy ice cream is a quicker way to satisfy a sweet tooth in under 5 minutes.

Watermelon

We’ll soon be enjoying this summer favourite at outdoor BBQ’s and family gatherings and perhaps some of it will get left. One thing you can do is cut leftover watermelon flesh into chunks, freeze and use in a gorgeous Margarita on the warmest day.

Banana Skins!

Earlier in the week we saw Dr Rupy create a vegan banana milk shake on Channel Four’s Cook Clever, Waste Less with Prue & Rupy, which looked delicious, fibrous and healthy. It’s a clever way to sneak in a skin or two, but a bolder step is using banana skin in main dishes!

Beloved kitchen goddess Nigella Lawson makes curry from banana peels. Her recipe is here, and there’s a couple other good recipes using them https://www.delish.com/uk/food-news/a32810114/you-can-eat-banana-peel/

Jenné Claiborne is an American vegan chef, health coach, and cooking instructor, who’s created a delicious recipe using banana peels, Carnitas. Carnitas is one of the most popular dishes in Mexico, but it’s normally made from meat, as the name would suggest. This recipe substitutes banana peels, which are a decent vegan substitute when shredded.
